Volcancito - Honey Caturra
Las Brisas is a hillside estate in southern Huila, Colombia, managed by Brayan Smith, a young producer known for his precise, hands-on approach and deep curiosity. The farm sits high in the mountains where cool nights and long ripening cycles bring intensity and clarity to the coffee. Brayan focuses on niche varieties, such as Pink Bourbon, Bourbon Ají, and Papayo, each fully washed and processed in small batches. Picked at peak ripeness, the cherries are depulped the same day, shortly fermented for 24-36 hours, and then washed before a slow, shaded drying on raised beds for around 20 days.

Collaboration
Our collaboration with Las Brisas is defined by variety testing— exploring how new and exciting varieties thrive and are best cultivated. We cup, measure, and record the outcomes of new selections each harvest, refining how each behaves under different handling and drying profiles. It allows both sides to learn: Brayan expands his genetic palette and offerings, and we deepen our understanding of how Colombia’s diverse varieties express their terroir through disciplined, data-driven craft.

Brewing Advice
Rested coffee
We recommend resting our coffees for at least 10 days after the roast date, and we often find our coffee the most expressive around 3 weeks.
Water
To prepare, simply add 3.0g of the mineral concentrate to every 1 litre of high-quality demineralised water, then give it a good shake. This curated mixture will result in a mineral concentration of 90 parts per million (ppm) of perfectly balanced mineral compositions, optimising the brewing conditions for an exceptional coffee experience.
Brewing Parameters
We recommend using 13 grams of coffees to 200 grams of water. A coarse grind size approximately 900 micron. Brewing temperature 92C. Our brewing pattern is a 50g circular pour every 40 seconds. Total brew time is 3:00.
